A Toast to Roast

One of my favorite meals even during a hot summer is a perfectly cooked rump roast submerged in wine, where it becomes so tender and juicy. I also love the

perfect au jus this recipe creates!

1 5LB Grass Fed Rump, Chuck, or bottom round roast

2 teaspoons Kosher salt

! /4 C EVOO Regenerative Organic Olive Oils – Burroughs Family Farms

2 Organic small yellow onions

3 Organic carrots cut into 1-inch slanted slices

4 Organic celery stalks also cut into 1-inch slanted slices

2 Tbls diced garlic

1 Bay leaf remove before serving

1 teaspoon black peppercorns

1 teaspoon ground sage

1/2 teaspoon crushed rosemary

1/4 teaspoon nutmeg

1 bottle Trader Joes TERRAIN VINEYARDS CALIFORNIA 2019 RED BLEND WINE

INSTRUCTIONS:

1, Preheat the oven to 250*F. Heat the olive oil in a large Dutch oven on medium=high heat. Season the roast with the kosher salt. Then brown

the rump roast on all sides to seal in the juices. Then move it to a rectangle pan to sit. (Later save this pan if you wish to make Yorkshire

pudding)

2. Place the carrots, onion, celery & garlic, into the Dutch oven and Sautee until the onions start to caramelize. Then add remaining ingredients.

Sautee until the vegetables soften and scrape the brown bits on the bottom with a wood spoon.

3. Place the roast back in the pan with the Holy Trinity or Mirepoix (vegetables)scooted to the side. Cover the with the bottle of TERRAIN VINEYARD. Then

add the beef stock just covering the roast halfway.

4. Cover the Dutch oven and heat to steaming, not yet a boil. Uncover the Dutch oven and place it in the pre-heated oven. Turn the roast over

every 30 minutes for about 2 1/2 hours. Check your roast for tenderness. Return to oven for 30 more minutes if needed to be fork tender. If the

au jus is boiling add some fresh water to stop the bubbling.

5. When the roast is easily pierced with a fork, remove from the oven and place on your serving platter. Spoon out your vegetables and place on

the side of your roast. Place your au jus in a small pan and

heat until it thickens & coats the back of your wooden spoon. Run this through your kitchen sieve, and after your roast has cooled and rested

you may slice your roast crosswise. Once you place the sliced roast on the platter, cover with your thickened au jus & make your Yorkshire

pudding if you wish. I also like to serve this placed over mashed potatoes.

6. Enjoy with a fine wine. Perhaps a Silver Oak Cabernet
